In Devil May Cry 4, Dante is able to transform into his demonic form in his very first appearance, in which he is attacked by Nero, and it is unaffected by the weapon he has equipped.. Demons are powered and fueled by human blood. Since Dante and Vergil are both, it's implied that their human blood is just constantly juicing them up. Other than that, I don't think a written reason or explanation is ever given.
